A Renaissance courtyard off Place Bellecour, fifty rooms around it, and a city that treats lunch as a competitive event. Lyon invented the bouchon — we simply kept the table warm.

Chef Camille Fournier cooks the bouchon canon without irony — quenelles in crayfish butter, Bresse chicken, a pink praline tart that arrives whether you ordered it or not. The Beaujolais is poured by the pot.

Beneath the courtyard, a hammam lined in Lyon silk, a marble plunge, and oils pressed from Rhône-valley lavender and walnut. The masseur works to the pace of the fountain outside, which is to say slowly.
